Sydney’s bar scene has all but exploded in the past month, with new watering holes popping up left, right and centre. If you feel like your to-do list is getting bigger by the second, you’re not alone. From a specialty cheese and hip hop joint, to one dedicated to Espresso Martinis, we’ve found plenty of great new places for you to check out. Here’s our list of Sydney’s new bar openings for August 2016.

Big Poppa’s – Darlinghurst

Cheese and hip hop might be an unlikely pairing, but this is Sydney, where anything goes! Big Poppa’s is a new Darlinghurst bar from a couple of local hospo guns; a moody, Italian-leaning joint with lots of love for fromage and Biggie Smalls. Here, you can dig into top-notch pasta dishes, feast on a global selection of cheeses and sip seriously good cocktails, all while jamming to some great beats.

Kittyhawk – CBD

Simply oozing vintage Parisian glamour, Kittyhawk is a new cocktail bar that you’ll definitely want to get acquainted with. The grand, old-world space is endlessly inviting, so get comfy in one of the luxe leather booths and let the bartenders whip you up something clever from their rum and rye-focused cocktail list. The French influence extends to the food menu, and there’s a focus on sustainability throughout.

Hacienda – CBD

Boasting snazzy styling, some sweet waterfront real estate and breathtaking panoramic views, this new Cuban-inspired bar is guaranteed to impress. Nestled within the Pullman Quay Grand Sydney Harbour, the elegant space borrows from Cuba’s plantation-style architecture – the ideal setting in which to quaff rum cocktails and Spanish wines, while tucking into the kitchen’s vibrant Latin American dishes.

The Edinburgh Castle Hotel – CBD

The Edinburgh Castle has unveiled its chic new look, the heritage building now sporting a sparkling fitout that inspires you to settle right in. It’s a modern day spin on the traditional Aussie pub, complete with elevated pub dining, a great range of classic cocktails and a very dapper lounge area in which to enjoy them. We’re also foreseeing many a weekend afternoon drinking session in the upstairs courtyard.

Tuxedo – The Rocks

Further proof of our city’s passion for Espresso Martinis, Sydney’s scored itself a bar that’s one big celebration of the classic caffeine-fuelled cocktail. Over in The Rocks, Tuxedo has taken up residence in the former Cadbury chocolate factory; the massive, industrial chic space now featuring a pool table, ping pong table and no less than six beautifully crafted Espresso Martini creations.
